During my trip to Thailand, I met Uncle Tai, who showed me a unique way of brewing Moka coffee using a combination of a coarser grind, tamping, pre-wetting, paper filters, and a shorter yield to produce a much more concentrated cup. In this video, I recreate his complete technique, explain every step of the process, measure the results with a refractometer, taste the coffee, and compare it with a more traditional approach to understand whether all these extra steps are actually worth it.
