In Matera, one of the oldest cities in Italy, bread is much more than food, it is part of the city’s identity! In this episode, we visit @PanificioPerronedal1890 , a historic family bakery opened in 1890 where generations of bakers have kept Matera’s bread-making tradition alive. At the heart of the bakery is the incredible Pane di Matera IGP, one of Italy’s most distinctive traditional breads. Made with local durum wheat semolina and natural fermentation, it is instantly recognizable by its unusual shape, thick crust, and characteristic yellow, open crumb. This bread is deeply connected to the history of Matera, where bread was once prepared by families at home and taken to communal ovens to be baked by the local fornaio. Today, that ancient tradition is still alive. But Pane di Matera is only the beginning. During our visit, we follow the bakers as they prepare taralli, pane basso, focaccia, brioches, and many other traditional baked goods.
