My Beets Are HUGE! Detroit Red Beet Harvest

Today I'm harvesting my Detroit Red beets from the garden! These beets were planted late, around May 25th, and I intentionally planted them in a shady area of the garden. Beets can handle cooler conditions and don't need the blazing summer sun that some other garden crops prefer. This shady location turned out to be a great choice. Most of these Detroit Red beets produced beautiful, bright-red bulbs that are just the right size for the kitchen—and especially for making one of my favorite preserved foods: pickled beets!
