German Schaufelstück

Fresh German Schaufelstück smoked low and slow on the Weber Kettle. Fun backyard cook. Started the evening before with a quick trim and added some salt, black pepper, granulated garlic, and onion powder for an overnight dry brine in the refrigerator. In the morning got the Weber up to 250 F using Buche/Beech charcoal and Beech wood chunks. Smoked it for 5.5 hours and let it rest for 1.5 hours before slicing and serving to the family. A complete hit with the juicy, big beef flavor. Will be tough to convince the family to cook a brisket in the future.
